Moroccan Chicken Tagine

Today, we are working with the chicken tagine sauce. The tagine sauce is a fuse of garlic, ginger, turmeric, cumin, coriander, lemon juice, saffron, olive oil, salt, and pepper. Much like all of the Mina sauces, the Tagine sauces are incredibly versatile. They can be used for poultry, beef or seafood dishes. You can even use the tagine sauces to create rich and flavorful vegetable stews.

Now, what is Tagine? Tagine refers to slow-cooked savory stews often made with meat or fish. But, the term also refers to the clay pot the stew is cooked in. Now, because of its shallow bottom shaped like a pie dish, and a conical lid with a round top, the tagine is the perfect pot for braising. But, you can also create a variety of dishes in the pot using ingredients such as beans, couscous, and other vegetables.

Now, of course, finding a tagine to cook your stew is a little hard nowadays. But, using a deep ceramic cast-iron Dutch oven will do the job just fine. You want to make sure your Dutch oven or ceramic pot has a lid. Or, use foil to cover the pot.

Moroccan Chicken Tagine

Ingredients

  • 4
    Chicken quarters (or 1 whole chicken cut into pieces)
  • 1
    chopped onion (or 10 pearl onions)
  • 1
  • 2
    tbsp. freshly chopped cilantro leaves
  • 1
    cup green pitted olives (halved)

Instructions

  1. To begin, preheat the oven to 400˚F.
  2. Now, add chicken and onions to a large dutch oven and pour the entire jar of sauce over the chicken. Cover the pot and braise in the preheated oven for 1 hour. After 30 minutes of cooking, remove the pot from the oven and stir in olives and 1 tablespoon of cilantro. Return the pot to the oven and continue to cook for the remaining 30 minutes.
  3. Finish with the remaining cilantro leaves and serve the chicken with rice, couscous, zucchini noodles or crusty bread to mop up all the delicious sauce.

Notes

  • Make sure you wait until the chicken is half cooked before you add the olives and cilantro so they do not lose their shape.
