The Best Autumn Kale Caesar Salad

Salads are kind of an after thought during the holiday season. So if you’re going to bring a salad to your family gathering, it needs to be a show stopper. And this Autumn Kale Caesar Salad with Focaccia Croutons checks that box and more! It’s a seasonal spin on a classic Caesar salad, featuring tender massaged kale, creamy homemade Caesar dressing, and golden, bakery-style focaccia croutons that elevate the entire dish. This is the kind of autumn salad that works for weeknight dinners, holiday gatherings, and meal prep all season long.

Why You’ll Love This Fall Kale Caesar Salad

Kale is one of the best greens for fall cooking. Its sturdy texture holds up beautifully to rich Caesar dressing, and when massaged, it becomes soft, silky, and full of flavor. Unlike more delicate greens that wilt quickly, kale stays crisp and vibrant—making this salad ideal for prepping ahead or serving at holiday events like Thanksgiving and Friendsgiving.

I love using cubed focaccia instead of traditional bread. It adds an herby, olive-oil richness that instantly deepens the flavor profile. Toasted until golden and crisp around the edges, these croutons bring bakery-quality texture that takes the salad from simple to unforgettable.

Perfect Seasonal Add-Ins

What makes this salad especially autumn-friendly is how easily it pairs with classic fall ingredients. Although our recipe adds delicate squash and fennel to bump up the seasonal flavors. Think of this Kale and Brussels sprouts base as an empty canvas. You can mix in roasted butternut squash, toasted pecans, or thinly sliced apples for extra seasonal flair. These additions blend seamlessly with the Caesar dressing, enhancing the flavors without overpowering them.

A Versatile Fall Salad for Any Occasion

This Autumn Kale Caesar Salad with Focaccia Croutons works as a light lunch, a hearty dinner side, or a show-stopping addition to any holiday menu. It brings together everything we love about autumn cooking—warmth, texture, comfort, and bold seasonal flavors—while still offering the freshness of a classic salad. Try dressing this salad with our Lemon Vinaigrette for an even brighter flavor profile.

If you’re looking for a reliable, delicious, and impressively simple fall salad recipe, this one will quickly become a favorite long after autumn ends.

tbsp parmesan cheese, plus more to garnish

  • 1/2

lb. brussels sprouts, cleaned and thinly sliced

  • 1

    bunch kale, chopped

  • 1

fennel bulb, cleaned and thinly sliced on a mandoline, plus 1 tablespoon fronds to garnish

  • 1

    avocado, sliced

  • CAESAR DRESSING

  • 1/2

a small head of roasted garlic

  • 1

    cup mayo (I like kewpie)

  • 1

    tsp stone ground mustard

  • 1

    tsp dijon mustard

  • 1

    tsp anchovy paste

  • juice of 1/2 a lemon

  • 1

    tsp worcestershire sauce

  • 1/3

    cup parmesan cheese

  • salt and pepper

Instructions

  1. Prep the delicata: Preheat your oven to 425°F. Toss the delicata squash slices with 2 tablespoons of olive oil, smoked paprika, chili powder, salt, and pepper. Spread onto a lined baking sheet in a single layer. (Use this time to prep garlic for the dressing). Slice a bulb of garlic in half and drizzle 1 tablespoon olive oil over the exposed cloves. Nestle the cloves between the squash pieces, cut side down.
  2. Roast: Transfer the pan to the oven and bake for about 25 minutes, flipping halfway through, until the squash is caramelized and tender.

  3. Toss the bread: In a large bowl, combine the bread cubes with 1 tablespoon of olive oil, a pinch of salt and pepper, and the 2 tablespoons of Parmesan cheese.

  4. Bake: Spread the cubes on a baking sheet and toast in the oven (you can do this at the same time as the squash) for 10–12 minutes, stirring once, until golden and crisp.

  5. Prep the greens: Add the Brussels sprouts and chopped kale to a large mixing bowl. Drizzle with remaining 2 tablespoons of olive oil and a pinch of salt and pepper. Massage the kale and Brussels sprouts with your hands for 1–2 minutes until it softens.

  6. Make the Caesar Dressing: Mash the roasted garlic in a small bowl and add the mayo, Dijon, stone ground mustard, anchovy paste, lemon juice, Parmesan, and a pinch of salt and pepper.

  7. Blend: Whisk until smooth and creamy. Adjust seasoning and lemon to taste.

  8. Assemble Salad: add the kale and Brussels sprouts to the bottom of a serving bowl. Then the roasted squash and fennel. Drizzle half the dressing over top and then add avocado slices, fennel fronds and parmesan cheese on top. SEE NOTES for make ahead instructions.

  9. Finish: serve the salad with croutons and the remaining caesar dressing.

Notes

To take this salad on the go or make ahead of time:
  • Roast the delicata squash in advance:
Cook the squash as directed, then let it cool completely. Store in an airtight container in the refrigerator for up to 3 days. Reheat in a 375°F oven for 8–10 minutes before serving, or serve chilled.

  • Prepare the croutons ahead:
Once baked and fully cooled, keep the croutons in an airtight container at room temperature. They will stay crisp for 4–5 days. If they soften, re-crisp them in a low oven for a few minutes.

  • Mix the dressing early:
The Caesar dressing can be made up to 5 days in advance. Store it in a sealed jar in the fridge. If it thickens, whisk in a splash of water or lemon juice before using.

  • Prep the greens and vegetables:

    • Kale: Wash, dry, and chop the kale up to 3 days ahead. Store in a large container lined with a paper towel to keep it dry.

    • Brussels sprouts: Shave and store in an airtight container for 2–3 days.

    • Fennel: Slice up to 24 hours in advance. Keep it submerged in cold water with a squeeze of lemon to prevent browning; drain well before assembling.

  • Avocado:
Slice the avocado right before serving to prevent browning. (If you absolutely must prep ahead, toss slices in lemon juice and store tightly wrapped, but freshness is best.)

  • Assemble day-of:
When ready to serve, simply toss the prepped greens with the dressing, fold in the roasted squash and croutons, add fresh avocado, and enjoy.
