The Best Lemon Vinaigrette

Salads are my fave. They’ve always been my fave. So, I’m always winging it and coming up with new dressings to keep things fresh. But I also have some Dressings I continuously go back to all the time. This Lemon Vinaigrette is exactly that. I make this shit ALL THE TIME! When I say this is ”The Best Lemon Vinaigrette,” baby, I mean that!

This lemon vinaigrette is a simple salad dressing that brings any and every salad to life. It’s bright, tangy, slightly sweet, and loaded with flavor. Make a batch, store it in the fridge, and drizzle it over your salads all week.

What I love most about this recipe and most vinaigrettes is the simplicity of the ingredients. All the ingredients in this vinaigrette are items you probably already have in your pantry. The one thing that may not already be in your pantry is nutritional yeast. You can find nutritional yeast in most grocery stores. But if you can’t find it, you can certainly use parmesan cheese instead.

What you need to make Lemon Vinaigrette:

  • Lemon juice – I recommend using fresh lemon juice instead of that stuff in the bottle. This way you will get the maximum flavor from the lemon juice.
  • Olive oil – Use extra virgin! Adds so much more flavor.
  • Honey – Adds the perfect about of sweetness to cut through the acidity of the lemon juice.
  • Garlic – What is a vinaigrette or dressing without garlic? Can you even trust those recipes?
  • Mustard – Asks as a bonding agent and adds great flavor. I am using stoneground, but you can use dijon.
  • Nutritional yeast – Adds the perfect nutty cheese flavor to the vinaigrette
  • Water – to thin out the dressing

Ingredients

  • 1/2

    cup lemon juice

  • 1/2

    cup olive oil

  • 4

    cloves garlic, roughly chopped

  • 2

    tbsp stoneground mustard 

  • 1/2

    tsp sea salt

  • 4

    tbsp nutritional yeast 

  • 2

    tsp honey or maple syrup

  • 1/4

    tsp Black pepper

  • Water

Instructions

  1. To begin, add the first 7 ingredients to a blender and blend until smooth and the dressing emulsified.
  2. Add the black pepper to the dressing and stir to combine.
  3. Now, add about 2-4 tablespoons of water to the dressing to thin it out so it’s pourable.
  4. Taste the dressing and adjust seasoning (salt, honey, mustard etc) to your liking.
  5. Serve immediately or store in an airtight container in the fridge until ready to serve.
  6. The dressing will thicken in the fridge. So, when you’re ready to serve, simply add a little water to the dressing and shake well to thin it out.
  7. Dressing will store in the fridge for a week.
