Creamy whipped coffee with a low carb twist. Served with hot or cold milk.
3 tbsp instant coffee
3 tbsp granulated monk fruit sweetener or erythritol
3 tbsp hot water
2 cup milk of choice
To begin, add the instant coffee, sweetener and hot water to a bowl. Whisk the mixture vigorously for 3-5 minutes until it starts to develop stiff peaks and the mixture is a light brown color and fluffy. At this point, you can taste the mixture (it will be very strong) and add more sweetener if desired.
You can also use a hand or stand mixer for this process. Just whip the mixture on one of the higher speeds for about 2-3 minutes.
Now, add 1 cup of milk into each glass along with a few ice cubes. Scoop equal amounts of the whipped coffee on top of the milk in each glass. Use a straw or a spoon to combine the milk and whipped coffee.
Sip and enjoy!
*You can also use hot milk if you choose. Just as delicious.
