The Best Keto Dalgona Coffee

First things first, I do not take any credit for this recipe creation. I personally don’t pay a lot of attention to viral trends because they can be fleeting. But, being an all things coffee lover, I had to give Dalgona coffee a try. And once I did, it was impossible to not fall in love. This Keto Dalgona coffee is no different. It is just as delicious, just using low-carb sweetener instead of sugar.

Now, don’t ask me where Dalgona coffee originated or how it went viral because I have no clue. I do know the name was coined in Korea, and that’s about all I know for sure. Everything else, you can google if you are very interested in the history of the Dalgona coffee trend.

So, with that being said, let’s jump into the recipe! Today, I will be sharing a Keto or low-carb friendly version of Dalgona coffee I like to enjoy more often. The original recipe of course uses regular sugar or you can use coconut sugar if you’re paleo. But, in this Keto version today, I will be using monk fruit sweetener and erythritol so you can see the consistency of the whipped coffee with 2 popular keto sweeteners.

Both low-carb sweeteners work very well. But, what I noticed is that the whipped coffee made with pure erythritol is a bit lighter in color and more airy. Now, the whipped coffee made with monk fruit, Did have stiffer peaks with the same amount of whisking time. But, let’s be real, whichever sweetener you decide to use, it is going to be delicious.

HOW TO: CREAMY KETO DALGONA COFFEE

You can see in the photo above, the whipped coffee with pure erythritol Is a bit lighter in color than the one sweetened with monk fruit sweetener.

Pour your milk and vanilla extract into a glass over ice. You can use whole milk or nut milk (I love macadamia milk here).

Top with the whipped coffee mixture.

Stir with a straw or spoon, sip and enjoy!

The Best Keto Dalgona Coffee

Ingredients

  • 3
    tbsp instant coffee
  • 3
    tbsp granulated monk fruit sweetener or erythritol
  • 3
    tbsp hot water
  • ice
  • 2
    cup milk of choice
  • 1/4
    tsp vanilla extract, divided

Instructions

  1. To begin, add the instant coffee, sweetener and hot water to a bowl. Whisk the mixture vigorously for 3-5 minutes until it starts to develop stiff peaks and the mixture is a light brown color and fluffy. At this point, you can taste the mixture (it will be very strong) and add more sweetener if desired.
  2. You can also use a hand or stand mixer for this process. Just whip the mixture on one of the higher speeds for about 2-3 minutes until you achieve stiff peaks.
  3. Now, add 1 cup of milk and an 1/8 teaspoon of vanilla extract into each glass along with a few ice cubes and stir to combine. Scoop equal amounts of the whipped coffee on top of the milk in each glass. Use a straw or a spoon to combine the milk and whipped coffee.
  4. Sip and enjoy!

Notes

  • *You can also use hot milk if you choose. Just as delicious.
