The Best Apple Butter Granola​

I’m not a huge early morning breakfast person. I will usually eat breakfast around 10 am! So around that time, I’m craving something hearty, quick and easy. This super delicious apple butter granola has been on repeat in my house. All my friends who come over love it. They just eat it straight out of the container. So, today, I’m sharing this very special and nutrient packed granola recipe with you!

One thing I love about granola is how customizable it is. You can add just about any ingredient you want. You can substitute pretty much everything in this recipe and that’s the beauty of granola. If you have a Nut allergy, substitute the nuts and the almond butter for more seeds and sunflower butter.

The possibilities are endless when it comes to serving the granola. Usually, I like to just pour it into a bowl, add some milk and fresh fruits and call it a day. But, here are some other ways to enjoy your granola.

  • Use it as a finisher on top of toast with Nut butter, or add a handful of granola to a warm salad.
  • Another one of my favorite ways to enjoy granola is by making a yogurt parfait. Simply create a few layers of yogurt, some fruit based sauce, and granola. Makes for a perfect snack or dessert.

Super Delicious Apple Butter Granola​

Ingredients

  • DRY INGREDIENTS:

  • 3
    cups rolled oats
  • 1
    cup raw nuts – chopped (I used a combination of cashews and almonds)
  • 1/2
    cup chia seeds
  • 1/4
    cup raw pumpkin seeds
  • 1
    tsp. sea salt
  • 1/2
    tsp. ground nutmeg
  • 1
    tsp. ground cinnamon
  • SAUCE:

  • 1/2
  • 1/2
    cup grade A maple syrup
  • 1/2
    cup apple sauce
  • 1/4
    cup brown butter ghee (butter or coconut oil will work)
  • 4
    tbsp. collagen peptides (optional)

Instructions

  1. To begin, preheat your oven to 250˚F.
  2. Line a large baking sheet with parchment paper and set it aside. If you don’t have a large sheet pan, use 2 small sheet pans.
  3. Now, add the oats, raw nuts, chia seeds, pumpkin seeds, salt, nutmeg, and cinnamon to a large mixing bowl and set it aside.
  4. Then, add all of the ingredients needed for the sauce into a small saucepan over medium heat. Continuously stir the mixture until it is heated through (do not bring it to a boil) and the mixture is smooth.
  5. Pour the mixture over the dry ingredients. Toss the mixture until all the dry ingredients are well coated with the sauce.
  6. Transfer the mixture to the prepared baking sheet and spread the mixture into an even layer.
  7. Now, transfer the baking sheet to the oven and bake the mixture for 1 hr and 30 minutes (stirring every 15-30 minutes to achieve even color all around). Remove the granola from the oven and toss it using a spatula (break up any big pieces that are stuck together). If the granola is still a little wet, put it back into the oven for another 15 minutes.
  8. When the granola is ready, allow it to cool completely. Store the granola in clean and completely dry mason jars and enjoy with nut milk, over smoothies… etc.

Notes

  • When stored correctly (in an airtight glass container or mason jar) the granola will keep for 4-6 months.

Made on Saturday in between making dinner and was super easy and is even more yummy! I’ve never made granola, and I don’t buy it because of the ingredients in store bought. With this recipe I was able to have it and enjoy it in my yogurts again. Even ate a handful on the way to the gym when I was pressed for time but needed a small snack.
