What you need to make Sweet & Salty Popcorn

  • Popped Popcorn – You can do this from scratch or buy a box of buttered popcorn and pop it according to the package instructions
  • Chex cereal – I used a combination of corn and rice Chex cereal. However, this is completely up to you. Use any cereal you have on hand or a combination of your favorites.
  • Nuts and Seeds – I used cashews, almonds, and pumpkin seeds. But again, this is completely customizable. Use an assortment according to your taste buds or allergy needs.
  • The Glaze – a very simple glaze made with brown sugar, maple syrup, butter, vanilla extract, and baking soda.

Now, with many of my recipes, you’ll love this one because it is so customizable. You can use whatever nuts or cereals you want. Start with the popcorn as the base; the rest is for you to have fun with. Everyone will love this one, especially the kids. So grab their favorite cereals and let them help you make this sweet and salty treat.

  • 2

    cups rice Chex

  • 1

    cup roasted unsalted cashews

  • 2/3

    cup pumpkin seeds

  • 1/2

    cup shaved almonds

  • 2/3

cup packed brown sugar (you can use coconut sugar)

  • 1/2

    cup maple syrup

  • 1/4

    cup butter, cut into cubes

  • 1/4

    cup cookie butter

  • 2

    tsp vanilla extract

  • 1/2

    tsp baking soda

Instructions

  1. To begin, grease a large deep roasting pan. Or if you’re using a nonstick roasting pan, there is no need to grease it. Then preheat the oven to 250°F.
  2. Add the popcorn, Chex, cashews, pumpkin seeds and shaved almonds to the prepared pan and set it aside.
  3. Add the sugar, maple syrup, butter and cookie butter to a saucepan and bring to a rolling boil. Boil for 6 minutes, stirring often. Remove the pan from the heat. Stir the vanilla extract and soda into the mixture until it’s light in color and fluffy.
  4. Immediately pour the mixture over the popcorn mix and toss until well coated.
  5. Transfer the pan to the oven and roast for 1 hour, stirring every 15-20 minutes.
  6. Let it cook completely and enjoy! Or gift to some of your favorite people.
