When you think of comfort food, you know potatoes are somewhere in there. Whether they are fried, creamed, boiled, roasted or in this case, slow cooked, they are amazing. My uncle asked me to make him some potatoes yesterday. But, he didn’t want them mashed or oven roasted. So, I decided to pop them in the slow cooker. And these slow cooker garlic herb potatoes are absolutely incredible.
Now, the key to keeping these potatoes tender and moist is the ghee. I always get so many questions about what brand of ghee I use. And for over a year now, I’ve been using Organic Valley’s clarified ghee. Every Organic Valley product is organic and is sustainably made without the use of pesticides, GMOs or antibiotics.
Growing up, I vividly remember my grandmother using Organic Valley’s half n’ half, cheese and butter in just about every recipe she thought me. I learned from her a long time ago to always support brands that are changing the way we view food and what we eat. Organic Valley is always evolving and embracing all diets and lifestyles. I may not use the same products my Grandmother did in her kitchen. But, think about how incredible it is to have the same timeless Organic Valley logo on the products I use in my kitchen today. I know this is going to sound incredibly sappy, so don’t judge me. But every time I open a jar of ghee or crack an egg, I feel like my grandmother is right there with me passing on her incredible kitchen skills. And that my friend is why this brand is so timeless.
Not only are they timeless, but the Organic Valley brand has always been a source of empowerment (even when it wasn’t as cool as it is now). They are not a big corporation. They are a group of more than 2,000 small family farms who share the same passion for growing food the right way. Since the beginning, they have always held on to the commitment that farmers should be treated fairly and food should be raised the right way. It’s never about how much money the company will earn this quarter. It is always about the principles and the many lives they change through food.

I always try to look around my kitchen and think about the products I use and the companies behind them. Are there huge companies out there who do try to better the world, of course. But, that isn’t the point. I want to challenge you to always think about or if you can, research the companies you purchase from. If they are not up to par with the values you hold dear, I guarantee you there is a small or local company you can feel great about supporting. We all want to give and feed our families the best. And that is precisely what brands like Organic Valley are trying to accomplish without sacrificing the principles we all hold dear. So with that, let’s jump into this recipe so you can get cooking!
Try serving alongside this decadent entree:Print
Potatoes slow cooked with herbs, garlic, and ghee.
1.5 lb. petite potato medley
3 tbsp. clarified ghee
1 tsp. salt
½ tsp. black pepper
1 tsp. herbs de Provence
2 garlic cloves (finely minced)
2 tbsp. freshly chopped cilantro to garnish
Start by wiping off all the potatoes using wet paper towels or a clean damp cloth.
Then cut all the small potatoes in half and cut the large potato into cubes.
Transfer the potatoes to the slow cooker.
Now, stir in ghee, salt, black pepper, herbs de Provence, and garlic until all the potatoes are well coated.
Cover the slow cooker and cook on high for 2-3 hours or on low for 4 hours.
Toss with fresh cilantro and serve.
If you do not have a slow cooker, you can roast the potatoes in the oven at 350˚F for 35-40 minutes.
