
It is almost Thanksgiving people! How? Can someone please explain to me? It is insane that this year is coming to a close. But it’s also exciting, right? Can’t wait for a clean slate. Now I know you are planning your Thanksgiving menu already. So, I want to be of some help. These Herb Roasted Carrots will be the perfect addition to your menu. They are easy and packed with simple yet delicious flavors.
Since I am not the one hosting Thanksgiving this year, I will only be making two dishes. So, I’m thinking about making both of those contributions Whole30 and Paleo friendly. Maybe add a Vegan dessert. It’s always fun to introduce my family to new ways of cooking, new flavors and different ways of eating. This is truly the perfect time to really bring everyone together and experience the magic of the kitchen.

Now, in my opinion, carrots are very universal. Especially for people who are starting to add more vegetables to their lifestyle. They are just the perfect snack, side dish, and addition to any meal. You can’t go wrong.
Herb Roasted Carrots

These carrots will be the perfect addition to the Thanksgiving menu. Add some cayenne to them for a spicy kick. Or, switch up the flavors. Cut the carrots into thinner and shorter pieces. Then, use warm spices like nutmeg and cinnamon and roast with ghee for a healthy and delicious snack. You will end up with perfectly roasted carrot fries even the kids will love.

Perfect Herb Roasted Carrots

Ingredients

bunches carrots (about 12 with green tops trimmed to about 2 inches)

tbsp. freshly chopped rosemary

tsp. fresh thyme

1/4
cup melted Ghee

tsp. garlic powder

tbsp. coconut aminos

Salt and pepper
Instructions
- Preheat oven to 400 degrees F.
- Clean, dry and slice each carrot in half. Now, transfer them to a large baking sheet. Whisk together ghee, rosemary, thyme, garlic powder and coconut aminos. Drizzle herb mixture over carrots and gently toss to coat. Season with salt and pepper to taste.
- Roast carrots for 35 minutes or until tender. If they aren’t tender after 35 minutes, lower the oven to 375 degrees F and continue to roast for about 10 minutes.
- Enjoy as a side dish alongside your protein of choice.
Delicious! I find that 15 minutes or so in the oven is long enough, as I like my carrots a little firmer. I brought these to a potluck event and received lots of compliments. Thanks!!
