Description
Refreshing, sweet and tangy. This low carb strawberry margarita is exactly what you need to unwind after a long day.
Ingredients
1 lb fresh strawberries, hulled
juice of 1 lime
juice of 1/2 a lemon
1/2 cup tequila
1/4 cup keto simple syrup or 2 tbsp low carb sweetener
lime wedges to serve
Instructions
To begin, add the strawberries, lime and lemon juice, tequila and simple syrup to a high powered blender. Blend the mixture until it’s smooth and set it aside for a few minutes.
While the margarita mix rests, prepare your glasses. To salt the rim of your glasses, add kosher or margarita salt to a plate and set it aside. Run a lime wedge along the rim of each glass and tip each glass into the salt. Twist the glass in the salt like you would a cookie cutter. Add a few ice cubes to each glass and set them aside.
Now, back to the margarita mix. Skim off as much of the foam from the top of the margarita mix as possible. You don’t need to get it all. Pour the margarita mix into the prepared glasses, garnish with lime wedges/slices and serve.
Notes
For frozen margaritas:
To serve frozen, add 4 cups of ice to the blender with the margarita mix and blend until smooth. Serve immediately.
For virgin margaritas:
I know not everyone drinks, so you can definitely make a non-alcoholic version of this strawberry margarita. Blend the strawberries, lime and lemon juice and simple syrup in a blender. Taste and add more sweetener or lime juice to your liking. Prepare the glasses according to the recipe. Add a few cubes of ice to your glass, pour some of the margarita mix into the bottom of the glass and top with sparkling water.
If you would like to do frozen margaritas, just follow the instructions above and omit the tequila.
