Summer in a Jar: Blueberry Peach Syrup

When summer fruits are in full swing, there’s nothing quite like capturing their vibrant flavor in a homemade syrup. This Blueberry Peach Syrup is the perfect way to celebrate the season. Whether you’re drizzling it over pancakes, swirling it into yogurt, or stirring it into sparkling water or cocktails, this syrup adds a burst of fruity goodness to anything it touches.

Why You’ll Love This Syrup

The combination of blueberries and peaches strikes a beautiful balance between tart and sweet. Blueberries bring a deep, jammy richness, while peaches add sunny, floral notes that taste just like summer. Simmered gently with a touch of lemon and just the right amount of sweetness, this syrup is both versatile and irresistibly delicious.

It’s also a great way to reduce waste when you’ve got an abundance of fruit that’s ripening faster than you can eat it. Slightly bruised peaches or soft blueberries work beautifully in this syrup, making it a delicious solution for using what you have on hand.

We also love saving the pulp after straining the syrup to use in oatmeal, chia pudding or serve over ice cream.

Ingredients

  • 2

medium peaches, peeled if preferred (or 1 cup frozen)

  • 1

    cup fresh or frozen blueberries

  • 1/2

cup sugar, more if you want it sweeter

  • 3/4

    cup water

  • 1

    tsp lemon zest

  • 1/2

tsp vanilla bean paste (optional, for a warm flavor boost)

Instructions

  1. In a medium saucepan, combine the blueberries, peaches, sugar, lemon zest and water.
  2. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  3. Reduce heat and simmer for 10–15 minutes, gently mashing the fruit as it softens.
  4. Stir in the vanilla bean paste and remove from heat.
  5. For a smooth syrup, strain through a fine mesh sieve (save the pulp for use in oatmeal, chia pudding…etc). For a chunkier, compote-style syrup, leave it as is.
  6. Let cool and store in a jar or bottle in the refrigerator for up to 2 weeks.
