Whether grilling, pan-searing, or roasting a piece of salmon, it is best to leave the skin on. The skin acts as a protective layer between the fish and the heat. Therefore, preventing overcooking. And salmon skin is HELLA delicious!
- When it comes to seasoning, it’s really up to you. You can marinate like we are doing today, or you can use a dry rub. I love cajun and coffee rubs on salmon. But I highly recommend trying different things and figuring out what you like.

Ingredients

lbs fresh wild-caught salmon fillet

tsp freshly chopped rosemary

cloves garlic, finely minced

tbsp melted ghee

juice of 1/2 lemon

tsp olive oil

tbsp coconut aminos

tsp garlic seasoning

Freshly chopped cilantro and lemon slices for garnish
Instructions
- Preheat oven to 375 degrees F.
- Pat salmon dry and place into a sheet pan lined with parchment paper.
- Add lemon juice, garlic, rosemary, ghee, olive oil, coconut aminos, and garlic seasoning to a small bowl and whisk to combine.
- Pour mixture over salmon.
- Let the salmon sit for about 5 minutes.
- Transfer the salmon to the oven and bake for 15 minutes.
- Turn the oven to broil and continue to cook for 5-7 minutes.
- Remove salmon from oven.
- Rest for a few minutes.
- Garnish with cilantro and lemon slices and serve.
