Foolproof Rosemary Cauliflower Mash

The Thanksgiving recipes are in full affect guys. And I didn’t come to play with Y’all! This simple cauliflower mash recipe is sure to bring comfort and more deliciousness to your Thanksgiving table.

Now, what makes this a must make? Well, your “potatoes” are actually cauliflower. Yes, honey. A yummy and easy spin on the classic mashed potatoes. Now there is nothing wrong with substituting the cauliflower in this recipe for actual potatoes. But, if you are looking for a delicious lower calorie spin on this classic staple? Then this recipe is for you.

Now before we jump into the recipe, I wanted to tell you guys I am going to be hosting the Whole30 Recipes feed on Instagram next week! And I am super excited and hella nervous. For those of you don’t don’t know, a Whole30 is basically the healthiest way (in my opinion and many others) to food freedom. Now, this recipe does not have to be Whole30 if you are into that or you want to make it more indulgent because it’s the holidays. Here are a few other ingredients you can add to your cauliflower mixture. Or other ways to mix up this recipe to your liking.


  • Parmesan Cheese.
  • Cream Cheese (choose an organic or vegan option).
  • Bacon bits.
  • Other herbs (cilantro, chives, parsley…etc).
  • Chopped chilies.
  • Use half potato, half cauliflower.
  • Use sweet potatoes instead.

So whether you are on a Whole30 or not, this recipe will definitely add some comfort and joy to your holiday menu. So without further ado, let’s get into the recipe, shall we?

Foolproof Rosemary Cauliflower Mash

  • 1
    large head of cauliflower (cut into florets)
  • 2
    garlic cloves
  • 2
    tbsp grass-fed ghee
  • 1
    rosemary sprig
  • 2
    tbsp. Full fat coconut milk
  • 1/4
    cup Parmesan cheese*-see notes (optional)
  • Cracked black pepper


  1. Start by filling a stock pot with about 2 1/2 inches of water and season the water generously with salt. Bring the water to a broil and set up a steamer basket over the pot (make sure the basket isn’t touching the water). Add the cauliflower florets to the steamer basket and lower the heat to medium-high (a gentle boil). Cover the pot with a tight fitting lid and steam the cauliflower for 7-10 minutes or until they are tender but aren’t falling apart (Test the cauliflower for tenderness half way through steaming). You can steam the cauliflower in batches if you are doubling the recipe. Remove the cauliflower florets from the steamer and set them aside.
  2. While the cauliflower steams, add the ghee, rosemary and garlic to a small pan over medium heat. Let the mixture simmer for about 5 minutes or until you start to smell the garlic. Remove the rosemary sprig from the ghee (it’s ok if a few rosemary leaves are left behind) and discard. Remove the ghee from the heat and set aside.
  3. Now add the cauliflower florets, the ghee, garlic, coconut milk and Parmesan cheese (optional) to a food processor and pulse until the mixture is creamy but still has some texture to it. Taste and season with salt and black pepper to taste. Serve immediately.


  • *Please note, if you are doing a round of Whole30 or if you follow a paleo diet and you are making this recipe, omit the Parmesan cheese.
