Pomegranate mocktails are easy, delicious and a crowd pleaser. Made with pomegranate juice, lime juice, low carb grapefruit infused simple syrup and finished with sparkling water.
Grapefruit-infused Simple Syrup
2/3 cup low carb sugar substitute (I like swerve granulated sugar replacement) *SEE NOTES
juice of 1/2 a grapefruit
1-inch grapefruit peel
2 ounces pomegranate juice
1.5 ounce grapefruit infused simple syrup
2 wedges lime
3 mint leaves
lime sparkling water
To begin, make the simple syrup. Add 1 cup of water, the sugar substitute, grapefruit juice and the grapefruit peel to a small saucepan over medium heat. Stir the mixture frequently until the sugar melts completely. Bring the mixture up to a simmer and simmer for about 3 minutes.
Remove the syrup from the heat and allow it to cool completely. Transfer to a jar with a tight lid and store in the fridge for up to a month.
Now, make the mocktail. Add the pomegranate juice, simple syrup and lime wedges to a cocktail shaker. Muddle the ingredients to release the juice from the lime wedges. Now, clap the mint leaves and add it to the shaker. Stir the mixture to combine.
Add some ice to a tall glass and pour the pomegranate mixture over the ice. Now, top with sparkling water and garnish with lime slices and mint leaves.
* you can also use regular sugar when making the syrup. Just make sure it’s a 1:1 ratio (1 cup water, 1 cup sugar along with the grapefruit juice).
If you want, you can use ginger ale to top off your mocktail. You don’t need to add any sweetener if you’re going to use ginger ale or any sweetened soda.
You can also use Stevia or monk-fruit to sweeten your mocktail if you don’t want to or don’t have time to make the syrup.
