

Ever since I can remember, watermelon has and will always be one of my favorite fruits. Who doesn’t love a juicy watermelon? If you raised your hand to that question, we really need to have a serious discussion. Anyway, today I am taking my love for watermelon to a new level and birthing a perfectly refreshing mocktail. No fuss Watermelon Spritzers are the perfect summertime refresher.

Now, of course if you are not the mocktail kinda girl and you want to kick this up a notch, you can use champagne or Prosecco to top off your spritzers..
HOW TO MAKE WATERMELON SPRITZERS:

First, peel and cut the watermelon into cubes and transfer those cubes to a high-powered blender like a vitamix along with the juice of half a lemon.

Now, add four mint leaves to the blender. If you are adding any sweetener (I recommend simple syrup) you can add it into the blender now. Then blend the watermelon mixture until until it’s smooth, about a minute.

Strain the watermelon juice through a fine mesh strainer and set it aside.

Add ice, lime and watermelon slices to a glass. Pour about half a cup of the watermelon juice into the glass.

Now top it off with sparkling water. I enjoy Spindrift grapefruit flavor.

Ingredients

heaping cups watermelon cubes

Juice of 1 lime

tbsp agave, more if needed

mint leaves, plus more to serve

Sparkling water, club soda, sparkling tea or Prosecco to serve

Lime slices and watermelon pieces to serve
Instructions
- To begin, add the watermelon cubes to a high-powered blender along with the lime juice, agave and mint leaves. Blend the mixture until smooth. Taste and add more agave or lime juice to taste. Strain the juice through a fine mesh strainer and set it aside.
- To make a drink, add ice, lime slices and watermelon pieces to a glass tumbler. Pour watermelon juice into the glass, leaving about an inch of space at the top. Now, top it off with sparkling water, sparkling tea, club soda, or Prosecco. Garnish with mint leaves and enjoy!
- You can also add an ounce or 2 of vodka to each glass if you feeling spicy. Then top it off with club soda to turn this into a cocktail. Garnish with mint leaves and serve.
Notes
- Try to find/use watermelon that is ripe and juicy.
- You can also freeze watermelon pieces and use that in place of ice to ensure your drink never tastes “watered down”.
- Make sure you don’t forget to strain the watermelon juice before serving.
