Creamy Avocado Lime Dressing (Vegan & Whole30)!

One of my goals this New Year is to eat more greens. And as someone who loves a good salad, I am excited to create lots of fun dressings for my salad canvases. This Creamy Avocado Lime Dressing isn’t just great for salads; you can spread it on sandwiches or use it as a dip. Versatility is a must around here, and we love that for us!

What you need to make Avocado Lime Dressing:

  • Cilantro
  • Avocado
  • Cashews – you can use pine nuts as a substitute
  • Nutritional yeast – this is not traditional yeast. This is deactivated yeast. Often used in Vegan recipes to add nutty or cheesy flavor. Comes in the form of yellow flakes, granules, or powder.
  • Jalapeños
  • Garlic cloves
  • Olive oil
  • Lime juice
  • Salt and pepper
  • Water

This Avocado Lime Dressing is the perfect “go-to” dressing/spread/dip. It’s creamy, tangy, and slightly nutty. Pour it over all your favorite salads, spread it over your sandwiches, or use it as a dip.

If you follow me on Instagram, you see me use this dressing on my favorite green salad and THIS SANDWICH! It’s easy to make and comes together in little to no time. Your Avocado Lime dressing will last up to 4 days in the fridge when stored in an airtight container.

Ingredients

  • 1

    Cup cilantro leaves 

  • 1/4

    Cup cashews, raw or roasted 

  • 1/2

    An avocado 

  • 1/2

    Jalapeño pepper, seeds removed and roughly chopped

  • 2

    Cloves garlic

  • 2

    Tbsp nutritional yeast

  • 1/4

    Cup olive oil

  • 2 tbsp

    Lime juice

  • 1/2

    Tsp sea salt, plus more to taste

  • Black pepper to taste

Instructions

  1. Add all the ingredients, except the black pepper, in a food processor and process until smooth. You will need to stop and scrape the sides of the food processor a few times. Thin out the dressing with water, 1/2 cup, give or take until it reaches your desired consistency. Add black pepper to taste and season with more salt if necessary.
  2. Serve over salads, in sandwiches or use as a dip. Store leftovers in an airtight container in the fridge for up to 4 days.
